Ingredients

1 pound calamari, cleaned and cut into rings
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 cup vegetable oil for frying
1 lemon, cut into wedges
fresh parsley, chopped for garnish (optional)

Instructions

  1. 1 In a bowl, combine the flour, salt, black pepper, and dried oregano.
  2. 2 Heat the vegetable oil in a deep pan over medium-high heat until it reaches 350°F (175°C).
  3. 3 Dredge the calamari rings in the flour mixture, ensuring they are well coated.
  4. 4 Shake off any excess flour from the calamari.
  5. 5 Carefully add the calamari to the hot oil in batches to avoid overcrowding.
  6. 6 Fry the calamari for 2-3 minutes or until golden brown and crispy.
  7. 7 Remove the fried calamari with a slotted spoon and drain on paper towels.
  8. 8 Repeat the frying process with the remaining calamari.
  9. 9 Serve the fried calamari hot with lemon wedges and garnish with fresh parsley if desired.
