Ingredients
| 1 cup | rice flour |
| 1/2 cup | urad dal (split black gram) |
| 1/4 cup | chana dal (split chickpeas) |
| 1/4 cup | moong dal (split green gram) |
| 1/2 cup | curd (yogurt) |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | salt |
| 1 teaspoon | turmeric powder |
| 1 tablespoon | ginger, grated |
| 2 tablespoons | fresh coriander, chopped |
| 1 tablespoon | oil |
| — | water as needed |
Instructions
- 1 Wash and soak the urad dal, chana dal, and moong dal together for at least 4 hours or overnight.
- 2 Drain the soaked dals and grind them into a smooth batter using a little water.
- 3 In a mixing bowl, combine the ground dal batter, rice flour, curd, cumin seeds, mustard seeds, salt, turmeric powder, and grated ginger.
- 4 Add water gradually to the mixture to form a thick, pourable batter.
- 5 Heat oil in a non-stick pan over medium heat.
- 6 Pour a ladleful of batter onto the pan and spread it gently to form a small pancake.
- 7 Cook until the edges start to lift and the bottom turns golden brown, then flip to cook the other side.
- 8 Repeat with the remaining batter.
- 9 Garnish with fresh coriander before serving.
Tips
Serve with green chutney or tomato ketchup for added flavor.
