Ingredients
| 1 cup | gahat dal (horse gram) |
| 2 cups | whole wheat flour |
| 1 tablespoon | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | ginger |
| 1 teaspoon | green chili |
| — | salt to taste |
| — | water as needed |
Instructions
- 1 Wash and soak the gahat dal overnight or for at least 6-8 hours.
- 2 Drain the soaked dal and pressure cook it with water until soft, about 3-4 whistles.
- 3 Allow the cooked dal to cool, then mash it coarsely.
- 4 In a pan, heat ghee and add cumin seeds. Once they splutter, add grated ginger and chopped green chili.
- 5 Add the mashed dal to the pan, season with salt, and cook for a few minutes until the mixture is dry. Let it cool.
- 6 In a bowl, mix whole wheat flour with a pinch of salt and water to form a soft dough.
- 7 Divide the dough into equal portions and roll each portion into a small disc.
- 8 Place a spoonful of the gahat filling in the center of each disc, gather the edges, and seal to form a ball.
- 9 Gently roll the stuffed ball into a flat disc, ensuring the filling does not spill out.
- 10 Heat a tawa or griddle and cook the roti on medium heat, applying ghee on both sides, until golden brown and cooked through.
- 11 Serve hot with yogurt or chutney.
Tips
Ensure the filling is dry to prevent it from spilling out while rolling the roti.
