Galho
The defining Naga one-pot meal — glutinous rice cooked together with pork, greens, and sometimes a spoonful of axone (fermented soybean) in a single pot until the rice breaks down into a thick, savoury porridge. Every Naga tribe makes a version; the Angami version uses fiddlehead ferns, the Ao version uses dried meat. Eaten as the daily meal with a small dish of raja mircha chutney.

Ingredients
| 1 cup | rice |
| 200 grams | pork (with bones) |
| 1 cup | mixed greens (like mustard leaves or spinach) |
| 1 medium | potato, diced |
| 1 medium | onion, sliced |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 1 teaspoon | salt |
| 1 teaspoon | turmeric powder |
| 2 cups | water |
| — | green chilies, to taste |
| — | salt to taste |
Instructions
- 1 Wash the rice thoroughly and set aside.
- 2 In a pot, add the pork along with the minced garlic, ginger, and sliced onion.
- 3 Add turmeric powder and salt to the pot.
- 4 Pour in 2 cups of water and bring it to a boil.
- 5 Once boiling, reduce the heat and let it simmer until the pork is half cooked.
- 6 Add the diced potato to the pot and continue to cook.
- 7 After the potato is partially cooked, add the washed rice and mix well.
- 8 Add more water if necessary to ensure the rice cooks properly.
- 9 Once the rice is almost done, add the mixed greens and green chilies.
- 10 Cook until the greens are tender and the rice is fully cooked.
- 11 Adjust salt to taste and serve hot.
Tips
For a vegetarian version, omit the pork and add more vegetables like carrots or beans.
