Ingredients
| 1 cup | urad dal (black gram) |
| 1 cup | water |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | black peppercorns |
| 1 | salt to taste |
| 1 tablespoon | finely chopped ginger |
| 2 tablespoons | finely chopped green chilies |
| 1 cup | finely chopped onions |
| 10 | curry leaves |
| 1 liter | oil for deep frying |
Instructions
- 1 Wash the urad dal thoroughly and soak it in water for 4-5 hours or overnight.
- 2 Drain the water from the soaked dal and grind it to a smooth batter using a little water. The batter should be thick.
- 3 Add cumin seeds, black peppercorns, salt, ginger, green chilies, onions, and curry leaves to the batter. Mix well.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Wet your hands and take a small portion of the batter. Flatten it slightly on your palm and make a hole in the center.
- 6 Carefully slide the shaped batter into the hot oil.
- 7 Fry the garelu until they turn golden brown and crispy on both sides.
- 8 Remove from oil and drain on paper towels to remove excess oil.
- 9 Serve hot with coconut chutney or sambar.
Tips
Ensure the batter is thick to get crispy garelu. You can add a pinch of baking soda for extra fluffiness.
