Ingredients

1 cup urad dal (black gram)
1 cup water
1 teaspoon cumin seeds
1 teaspoon black peppercorns
1 salt to taste
1 tablespoon finely chopped ginger
2 tablespoons finely chopped green chilies
1 cup finely chopped onions
10 curry leaves
1 liter oil for deep frying

Instructions

  1. 1 Wash the urad dal thoroughly and soak it in water for 4-5 hours or overnight.
  2. 2 Drain the water from the soaked dal and grind it to a smooth batter using a little water. The batter should be thick.
  3. 3 Add cumin seeds, black peppercorns, salt, ginger, green chilies, onions, and curry leaves to the batter. Mix well.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Wet your hands and take a small portion of the batter. Flatten it slightly on your palm and make a hole in the center.
  6. 6 Carefully slide the shaped batter into the hot oil.
  7. 7 Fry the garelu until they turn golden brown and crispy on both sides.
  8. 8 Remove from oil and drain on paper towels to remove excess oil.
  9. 9 Serve hot with coconut chutney or sambar.

Tips

Ensure the batter is thick to get crispy garelu. You can add a pinch of baking soda for extra fluffiness.
