Ingredients
| 1 cup | gavda beans (field beans) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 10-12 | curry leaves |
| 2 tablespoons | grated coconut |
| 2 | green chilies, slit |
| 0.5 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | jaggery |
| to taste | salt |
| 2 tablespoons | chopped coriander leaves |
Instructions
- 1 Soak the gavda beans overnight or for at least 8 hours.
- 2 Drain the soaked beans and set aside.
- 3 Heat oil in a pan over medium heat.
- 4 Add mustard seeds and let them splutter.
- 5 Add cumin seeds, asafoetida, and curry leaves, and sauté for a few seconds.
- 6 Add the slit green chilies and sauté for a minute.
- 7 Add the drained gavda beans and mix well.
- 8 Stir in the turmeric powder, red chili powder, and salt.
- 9 Add about 1/2 cup of water, cover, and cook until the beans are tender.
- 10 Once the beans are cooked, add grated coconut and jaggery, and mix well.
- 11 Cook for another 2-3 minutes until the flavors meld together.
- 12 Garnish with chopped coriander leaves before serving.
Tips
Adjust the amount of water based on the consistency you prefer for the curry.
