Ingredients
| 1/2 cup | whole wheat grains |
| 4 cups | milk |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | ghee |
| 2 tablespoons | cashew nuts |
| 2 tablespoons | raisins |
| — | saffron strands (optional) |
Instructions
- 1 Wash the whole wheat grains thoroughly and soak them in water for 6-8 hours or overnight.
- 2 Drain the soaked wheat and coarsely grind it using a blender or grinder.
- 3 In a heavy-bottomed pan, heat ghee over medium heat and roast the cashew nuts and raisins until golden. Remove and set aside.
- 4 In the same pan, add the coarsely ground wheat and roast it in the remaining ghee for about 5-7 minutes until it emits a nutty aroma.
- 5 Add milk to the pan and bring it to a boil. Reduce the heat and let it simmer, stirring occasionally to prevent sticking, until the wheat is cooked and the mixture thickens, about 25-30 minutes.
- 6 Add jaggery and stir until it dissolves completely.
- 7 Add cardamom powder and saffron strands, if using, and mix well.
- 8 Garnish with the roasted cashew nuts and raisins before serving.
Tips
Soaking the wheat grains overnight helps in faster cooking and better texture.
