Ingredients

1/2 cup whole wheat grains
4 cups milk
1/2 cup jaggery
1/4 teaspoon cardamom powder
2 tablespoons ghee
2 tablespoons cashew nuts
2 tablespoons raisins
saffron strands (optional)

Instructions

  1. 1 Wash the whole wheat grains thoroughly and soak them in water for 6-8 hours or overnight.
  2. 2 Drain the soaked wheat and coarsely grind it using a blender or grinder.
  3. 3 In a heavy-bottomed pan, heat ghee over medium heat and roast the cashew nuts and raisins until golden. Remove and set aside.
  4. 4 In the same pan, add the coarsely ground wheat and roast it in the remaining ghee for about 5-7 minutes until it emits a nutty aroma.
  5. 5 Add milk to the pan and bring it to a boil. Reduce the heat and let it simmer, stirring occasionally to prevent sticking, until the wheat is cooked and the mixture thickens, about 25-30 minutes.
  6. 6 Add jaggery and stir until it dissolves completely.
  7. 7 Add cardamom powder and saffron strands, if using, and mix well.
  8. 8 Garnish with the roasted cashew nuts and raisins before serving.

Tips

Soaking the wheat grains overnight helps in faster cooking and better texture.
