Ingredients

1 medium eggplant
1 cup gram flour (besan)
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/4 teaspoon asafoetida (hing)
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup water
as needed oil for frying

Instructions

  1. 1 Wash the eggplant and slice it into thin rounds.
  2. 2 In a mixing bowl, combine gram flour, red chili powder, turmeric powder, cumin powder, coriander powder, asafoetida, salt, and baking soda.
  3. 3 Gradually add water to the dry ingredients, mixing well to form a smooth, thick batter.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Dip each eggplant slice into the batter, ensuring it is well coated.
  6. 6 Carefully drop the coated slices into the hot oil and fry until golden brown and crisp on both sides.
  7. 7 Remove the bajjis from the oil and drain them on paper towels to remove excess oil.
  8. 8 Serve hot with chutney or sauce of your choice.

Tips

Ensure the oil is hot enough before frying to make the bajjis crispy.
