Ingredients
| 1 medium | eggplant |
| 1 cup | gram flour (besan) |
| 1 teaspoon | red chili powder |
| 1/2 teaspoon | turmeric powder |
| 1/2 teaspoon | cumin powder |
| 1/2 teaspoon | coriander powder |
| 1/4 teaspoon | asafoetida (hing) |
| 1/2 teaspoon | salt |
| 1/4 teaspoon | baking soda |
| 1 cup | water |
| as needed | oil for frying |
Instructions
- 1 Wash the eggplant and slice it into thin rounds.
- 2 In a mixing bowl, combine gram flour, red chili powder, turmeric powder, cumin powder, coriander powder, asafoetida, salt, and baking soda.
- 3 Gradually add water to the dry ingredients, mixing well to form a smooth, thick batter.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Dip each eggplant slice into the batter, ensuring it is well coated.
- 6 Carefully drop the coated slices into the hot oil and fry until golden brown and crisp on both sides.
- 7 Remove the bajjis from the oil and drain them on paper towels to remove excess oil.
- 8 Serve hot with chutney or sauce of your choice.
Tips
Ensure the oil is hot enough before frying to make the bajjis crispy.
