Dharwad and Hubli's iconic puffed rice street food — puffed rice tossed immediately with finely chopped onion, raw mango, tomato, roasted peanuts, beaten green chilli, fresh coriander, and tamarind chutney. The puffed rice turns limp within minutes of mixing; girmit must be eaten within seconds of preparation. Sold at evening street stalls from handcarts loaded with all the components, assembled to order.

Ingredients

2 cups puffed rice (mandakki)
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 tablespoon peanuts
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 teaspoon turmeric powder
1 tablespoon cooking oil
1 small green chili, finely chopped
2 tablespoons coriander leaves, chopped
1 tablespoon lemon juice
salt to taste
sev for garnish

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add mustard seeds and cumin seeds, and let them splutter.
  3. 3 Add peanuts and fry until they turn golden brown.
  4. 4 Add asafoetida, chopped green chili, and onions. Sauté until onions turn translucent.
  5. 5 Add turmeric powder and chopped tomatoes. Cook until tomatoes soften.
  6. 6 Add salt and mix well.
  7. 7 Turn off the heat and add the puffed rice to the mixture. Mix until the puffed rice is well coated with the masala.
  8. 8 Add lemon juice and chopped coriander leaves. Mix well.
  9. 9 Serve the girmit topped with sev for garnish.

Tips

For a spicier version, add more green chilies or a pinch of red chili powder.
