Ingredients
| 1 cup | Goan red rice |
| 2 cups | water |
| 1 teaspoon | salt |
| 1 tablespoon | coconut oil |
Instructions
- 1 Rinse the Goan red rice under cold water until the water runs clear.
- 2 In a medium-sized pot, bring 2 cups of water to a boil.
- 3 Add the rinsed rice to the boiling water.
- 4 Stir in the salt and coconut oil.
- 5 Reduce the heat to low, cover the pot with a lid, and let it simmer for about 30-35 minutes until the rice is cooked and the water is absorbed.
- 6 Turn off the heat and let the rice sit, covered, for another 5 minutes.
- 7 Fluff the rice with a fork before serving.
Tips
For a richer taste, use freshly grated coconut as a garnish.
