Ingredients

1 cup Goan red rice
2 cups water
1 teaspoon salt
1 tablespoon coconut oil

Instructions

  1. 1 Rinse the Goan red rice under cold water until the water runs clear.
  2. 2 In a medium-sized pot, bring 2 cups of water to a boil.
  3. 3 Add the rinsed rice to the boiling water.
  4. 4 Stir in the salt and coconut oil.
  5. 5 Reduce the heat to low, cover the pot with a lid, and let it simmer for about 30-35 minutes until the rice is cooked and the water is absorbed.
  6. 6 Turn off the heat and let the rice sit, covered, for another 5 minutes.
  7. 7 Fluff the rice with a fork before serving.

Tips

For a richer taste, use freshly grated coconut as a garnish.
