The first, single distillate of fermented cashew apple juice — lighter, fruitier, and lower in alcohol than the double-distilled feni. A seasonal Goan drink available only during the summer cashew harvest, traditionally mixed with Limca or fresh lime.

Ingredients

1 liter fresh cashew apple juice
100 grams sugarcane jaggery
1 teaspoon yeast

Instructions

  1. 1 Extract fresh juice from cashew apples by crushing them and collecting the liquid.
  2. 2 Strain the juice through a fine cloth to remove any solids.
  3. 3 In a large pot, add the cashew apple juice and bring it to a gentle boil.
  4. 4 Add the sugarcane jaggery to the boiling juice and stir until fully dissolved.
  5. 5 Allow the mixture to cool to room temperature.
  6. 6 Once cooled, add the yeast to the mixture and stir well.
  7. 7 Transfer the mixture to a fermentation vessel and cover it with a clean cloth.
  8. 8 Allow the mixture to ferment for 3-4 days in a warm, dark place.
  9. 9 After fermentation, strain the liquid to remove any sediment.
  10. 10 Bottle the strained liquid and let it mature for a few more days before serving.

Tips

Ensure the fermentation vessel is not airtight to allow gases to escape. Taste the Urak periodically to achieve the desired level of fermentation.
