Ingredients
| 1 liter | fresh cashew apple juice |
| 100 grams | sugarcane jaggery |
| 1 teaspoon | yeast |
Instructions
- 1 Extract fresh juice from cashew apples by crushing them and collecting the liquid.
- 2 Strain the juice through a fine cloth to remove any solids.
- 3 In a large pot, add the cashew apple juice and bring it to a gentle boil.
- 4 Add the sugarcane jaggery to the boiling juice and stir until fully dissolved.
- 5 Allow the mixture to cool to room temperature.
- 6 Once cooled, add the yeast to the mixture and stir well.
- 7 Transfer the mixture to a fermentation vessel and cover it with a clean cloth.
- 8 Allow the mixture to ferment for 3-4 days in a warm, dark place.
- 9 After fermentation, strain the liquid to remove any sediment.
- 10 Bottle the strained liquid and let it mature for a few more days before serving.
Tips
Ensure the fermentation vessel is not airtight to allow gases to escape. Taste the Urak periodically to achieve the desired level of fermentation.
