Ingredients
| 1 cup | whole wheat (godhi) |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 2 cups | water |
| 1/4 teaspoon | cardamom powder |
| 10-12 | cashew nuts |
| 10-12 | raisins |
| 1 pinch | saffron strands |
| — | salt to taste |
Instructions
- 1 Dry roast the whole wheat in a pan on medium heat until it turns golden brown and aromatic.
- 2 Allow the roasted wheat to cool, then grind it into a coarse powder.
- 3 In a separate pan, add ghee and fry the cashew nuts until golden brown, then add raisins and fry until they puff up. Remove and set aside.
- 4 In the same pan, add 2 cups of water and bring it to a boil.
- 5 Add the ground wheat to the boiling water, stirring continuously to avoid lumps.
- 6 Once the wheat is cooked and the mixture thickens, add jaggery and stir until it dissolves completely.
- 7 Add cardamom powder, saffron strands, and a pinch of salt. Mix well.
- 8 Finally, add the fried cashew nuts and raisins, and stir everything together.
- 9 Cook for a few more minutes until the kesari reaches the desired consistency, then remove from heat.
Tips
For a richer flavor, you can add a little more ghee while cooking.
