Ingredients
| 1 cup | gondli (foxtail millet) |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| 1 cup | water |
| 1/4 cup | grated coconut |
| 1 pinch | salt |
| 1 tablespoon | ghee |
Instructions
- 1 Wash the gondli thoroughly under running water and soak it in water for 2 hours.
- 2 Drain the water from the soaked gondli and set it aside.
- 3 In a pan, add 1 cup of water and bring it to a boil.
- 4 Add the jaggery to the boiling water and stir until it dissolves completely.
- 5 Strain the jaggery syrup to remove any impurities and return it to the pan.
- 6 Add the soaked gondli to the jaggery syrup and mix well.
- 7 Cook on low heat, stirring occasionally, until the gondli is cooked and the mixture thickens.
- 8 Add the cardamom powder, grated coconut, and a pinch of salt to the mixture and stir well.
- 9 Continue to cook for another 5-7 minutes until the mixture reaches a thick, pudding-like consistency.
- 10 Grease a small plate or tray with ghee and pour the gondli mixture onto it.
- 11 Flatten the mixture evenly and let it cool down to room temperature.
- 12 Cut the cooled gondli pitha into desired shapes and serve.
Tips
Ensure the jaggery syrup is free of impurities by straining it before adding the gondli.
