Ingredients

Mutton 300 grams Mutton , cut into pieces
oil 2 tablespoons Oil
Onion 1 large Onion , finely chopped
ginger-garlic paste 2 teaspoons Ginger-garlic paste
turmeric powder 1 teaspoon Turmeric powder
red chili powder 1 teaspoon Red chili powder
Cumin 1 teaspoon Cumin , powder
coriander powder 1 teaspoon Coriander powder
vinegar 2 tablespoons Vinegar
sugar 1 tablespoon Sugar
Tomato 1 cup Tomato , puree
water 1 cup Water
salt Salt , to taste
Cilantro 1 handful Cilantro , chopped

Instructions

  1. 1 Heat oil in a pan and add the chopped onions. Sauté until golden brown.
  2. 2 Add the ginger-garlic paste and sauté for another 2 minutes.
  3. 3 Add the mutton pieces and cook until they are browned on all sides.
  4. 4 Stir in the turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well.
  5. 5 Add the vinegar and sugar, then pour in the tomato puree. Stir to combine.
  6. 6 Add water and salt to taste. Mix well and bring to a boil.
  7. 7 Lower the heat, cover the pan, and let it simmer until the mutton is tender, about 30-35 minutes.
  8. 8 Garnish with fresh coriander leaves before serving.

For a richer flavor, marinate the mutton with spices for an hour before cooking.
