2 tablespoons | Oil |

1 large | Onion , finely chopped |

2 teaspoons | Ginger-garlic paste |

1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Cumin , powder |
|
1 teaspoon | Coriander powder |
|
2 tablespoons | Vinegar |
|
1 tablespoon | Sugar |
|
1 cup | Tomato , puree |
|
1 cup | Water |
|
— | Salt , to taste |

1 handful | Cilantro , chopped |
Instructions
- 1 Heat oil in a pan and add the chopped onions. Sauté until golden brown.
- 2 Add the ginger-garlic paste and sauté for another 2 minutes.
- 3 Add the mutton pieces and cook until they are browned on all sides.
- 4 Stir in the turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well.
- 5 Add the vinegar and sugar, then pour in the tomato puree. Stir to combine.
- 6 Add water and salt to taste. Mix well and bring to a boil.
- 7 Lower the heat, cover the pan, and let it simmer until the mutton is tender, about 30-35 minutes.
- 8 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, marinate the mutton with spices for an hour before cooking.
