Ingredients

2 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
1 teaspoon sugar
1 teaspoon active dry yeast
3/4 cup warm water

Instructions

  1. 1 In a small bowl, dissolve the sugar and yeast in 1/4 cup of the warm water. Let it sit for about 5-10 minutes until it becomes frothy.
  2. 2 In a large mixing bowl, combine the flour and salt.
  3. 3 Add the yeast mixture, olive oil, and the remaining warm water to the flour mixture.
  4. 4 Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  5. 5 Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. 6 Preheat the oven to 475°F (245°C) and place a baking sheet or stone inside to heat.
  7. 7 Punch down the dough and divide it into 4 equal pieces. Roll each piece into a ball, then flatten into a circle about 1/4 inch thick.
  8. 8 Place the dough circles on the hot baking sheet and bake for 5-7 minutes, or until the pita bread puffs up and is lightly golden.
  9. 9 Remove from the oven and cover with a clean towel to keep them soft.

Tips

For softer pita, brush with olive oil before baking.
