Ingredients

1 cup whole wheat flour
1 cup jaggery
1/2 cup water
2 tablespoons ghee
1/4 teaspoon cardamom powder
1 pinch salt
as needed oil for cooking

Instructions

  1. 1 In a bowl, mix whole wheat flour with a pinch of salt and add water gradually to form a soft dough. Cover and let it rest for 15 minutes.
  2. 2 In a pan, add jaggery and water. Heat until the jaggery melts completely. Stir in cardamom powder and ghee, then let it cool slightly.
  3. 3 Divide the dough into small balls. Roll each ball into a small disc.
  4. 4 Place a spoonful of the jaggery mixture in the center of each disc, fold the edges over the filling, and seal it.
  5. 5 Gently roll out the filled dough balls into flat, round polis.
  6. 6 Heat a tawa or flat pan over medium heat. Cook each poli on both sides until golden brown, applying oil as needed.
  7. 7 Serve warm, optionally with a dollop of ghee on top.

Tips

Ensure the jaggery mixture is not too hot when filling the dough to prevent tearing.
