Ingredients
| 1 cup | whole wheat flour |
| 1 cup | jaggery |
| 1 tablespoon | sesame seeds |
| 2 tablespoons | ghee |
| 1/4 teaspoon | cardamom powder |
| 1 pinch | salt |
| as needed | water |
Instructions
- 1 In a mixing bowl, combine whole wheat flour and a pinch of salt.
- 2 Gradually add water to the flour and knead into a soft, pliable dough. Cover and let it rest for 15 minutes.
- 3 In a pan, heat ghee and add sesame seeds. Roast until they are golden brown.
- 4 Add jaggery to the pan and stir continuously on low heat until it melts completely.
- 5 Mix in cardamom powder and remove from heat. Let the jaggery mixture cool slightly.
- 6 Divide the dough into equal portions and roll each into a small ball.
- 7 Flatten each ball and place a spoonful of the jaggery mixture in the center.
- 8 Fold the edges of the dough over the filling and seal it completely.
- 9 Roll the filled dough gently into a flat disc, ensuring the filling doesn't spill out.
- 10 Heat a tawa or skillet over medium heat and cook the gulpoli until both sides are golden brown, applying ghee as needed.
- 11 Serve warm.
Tips
Ensure the jaggery mixture is not too hot while filling, as it can tear the dough.
