Ingredients

1 cup whole wheat flour
1 cup jaggery
1 tablespoon sesame seeds
2 tablespoons ghee
1/4 teaspoon cardamom powder
1 pinch salt
as needed water

Instructions

  1. 1 In a mixing bowl, combine whole wheat flour and a pinch of salt.
  2. 2 Gradually add water to the flour and knead into a soft, pliable dough. Cover and let it rest for 15 minutes.
  3. 3 In a pan, heat ghee and add sesame seeds. Roast until they are golden brown.
  4. 4 Add jaggery to the pan and stir continuously on low heat until it melts completely.
  5. 5 Mix in cardamom powder and remove from heat. Let the jaggery mixture cool slightly.
  6. 6 Divide the dough into equal portions and roll each into a small ball.
  7. 7 Flatten each ball and place a spoonful of the jaggery mixture in the center.
  8. 8 Fold the edges of the dough over the filling and seal it completely.
  9. 9 Roll the filled dough gently into a flat disc, ensuring the filling doesn't spill out.
  10. 10 Heat a tawa or skillet over medium heat and cook the gulpoli until both sides are golden brown, applying ghee as needed.
  11. 11 Serve warm.

Tips

Ensure the jaggery mixture is not too hot while filling, as it can tear the dough.
