Ingredients
| 1 cup | whole wheat flour |
| 1 cup | jaggery, grated |
| 1 cup | chana dal (split Bengal gram) |
| 1/4 teaspoon | cardamom powder |
| 1 pinch | salt |
| 2 tablespoons | ghee |
| as needed | water |
Instructions
- 1 Rinse the chana dal thoroughly and soak it in water for 30 minutes.
- 2 Drain the soaked chana dal and pressure cook it with enough water until soft, about 3-4 whistles.
- 3 Once cooked, drain any excess water and mash the dal to a smooth consistency.
- 4 In a pan, add the mashed dal and grated jaggery. Cook on a low flame, stirring continuously until the mixture thickens and leaves the sides of the pan.
- 5 Add cardamom powder to the mixture, mix well, and let it cool. This is the 'puran' filling.
- 6 In a bowl, mix whole wheat flour, a pinch of salt, and enough water to knead into a soft dough. Let it rest for 15 minutes.
- 7 Divide the dough and puran into equal portions.
- 8 Roll out a portion of the dough into a small circle. Place a portion of the puran filling in the center.
- 9 Gather the edges of the dough to seal the filling and roll it out gently into a flat circle.
- 10 Heat a tawa (griddle) and cook the rolled poli on both sides, applying ghee until golden brown spots appear.
- 11 Repeat the process for the remaining dough and filling.
- 12 Serve warm with a dollop of ghee.
Tips
Ensure the puran filling is smooth and not too watery for easy rolling.
