2 cups | Basmati rice |

200 grams | Chicken , cut into pieces |

1 tablespoon | Mustard oil |
|
1 teaspoon | Ginger-garlic paste |
|
1 medium | Onion , sliced |
|
1 medium | Tomato , chopped |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Cumin , powder |
|
1 teaspoon | Coriander powder |
|
— | Salt , to taste |

2 cups | Water |
|
2 tablespoons | Cilantro , chopped |
Instructions
- 1 Wash and soak the basmati rice for 30 minutes.
- 2 Heat mustard oil in a pan over medium heat.
- 3 Add the sliced onions and sauté until golden brown.
- 4 Add ginger-garlic paste and sauté for another minute.
- 5 Add the chicken pieces and cook until they turn white.
- 6 Stir in the chopped tomatoes and cook until they soften.
- 7 Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
- 8 Drain the soaked rice and add it to the pan, stirring gently to combine.
- 9 Pour in the water and bring it to a boil.
- 10 Reduce the heat to low, cover the pan, and let it simmer until the rice is cooked and the water is absorbed.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For extra flavour, use whole spices like bay leaf, cardamom, and cinnamon in the oil first.
