1/2 cup | Water |

1 tablespoon | Oil |

1 cup | Cabbage , thinly sliced |

1/2 cup | Carrot , julienned |
|
1 cup | Chicken , thinly sliced |
|
1 teaspoon | Soy sauce |
|
1 teaspoon | Ginger , minced |
|
1 teaspoon | Garlic , minced |
|
4 cups | Chicken broth |
|
1 tablespoon | Spring Onion , chopped |
|
1 | Black Pepper , to taste |
Instructions
- 1 In a bowl, mix the flour, egg, salt, and water to form a smooth dough.
- 2 Knead the dough for about 5 minutes until elastic, then cover and let it rest for 15 minutes.
- 3 Roll out the dough thinly on a floured surface and cut into thin strips to make noodles.
- 4 In a pot, heat oil over medium heat and sauté ginger and garlic until fragrant.
- 5 Add the chicken slices and cook until they turn white.
- 6 Stir in the cabbage and carrot, and cook until they soften slightly.
- 7 Add the soy sauce, chicken broth, salt, and pepper, and bring to a boil.
- 8 Gently add the noodles to the boiling broth and cook until they are tender.
- 9 Serve hot, garnished with chopped spring onion.
Tips
For a vegetarian version, replace chicken with tofu and use vegetable broth.
