Ingredients

1 cup all-purpose flour
1 egg
1/4 teaspoon salt
1/2 cup water
1 tablespoon oil
1 cup cabbage, thinly sliced
1/2 cup carrot, julienned
1 cup chicken, thinly sliced
1 teaspoon soy sauce
1 teaspoon ginger, minced
1 teaspoon garlic, minced
4 cups chicken broth
1 tablespoon spring onion, chopped
1 salt to taste
1 black pepper to taste

Instructions

  1. 1 In a bowl, mix the flour, egg, salt, and water to form a smooth dough.
  2. 2 Knead the dough for about 5 minutes until elastic, then cover and let it rest for 15 minutes.
  3. 3 Roll out the dough thinly on a floured surface and cut into thin strips to make noodles.
  4. 4 In a pot, heat oil over medium heat and sauté ginger and garlic until fragrant.
  5. 5 Add the chicken slices and cook until they turn white.
  6. 6 Stir in the cabbage and carrot, and cook until they soften slightly.
  7. 7 Add the soy sauce, chicken broth, salt, and pepper, and bring to a boil.
  8. 8 Gently add the noodles to the boiling broth and cook until they are tender.
  9. 9 Serve hot, garnished with chopped spring onion.

Tips

For a vegetarian version, replace chicken with tofu and use vegetable broth.
