Ingredients
| 1 cup | hahor mangxo (duck meat), cut into pieces |
| 1 large | bhim kol (ripe banana) |
| 1 tablespoon | mustard oil |
| 1 teaspoon | panch phoron (Assamese five spice blend) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | ginger paste |
| 1 teaspoon | garlic paste |
| 2 cups | water |
| — | salt to taste |
| 1 handful | coriander leaves, chopped |
Instructions
- 1 Heat mustard oil in a pan over medium heat.
- 2 Add panch phoron and let it splutter.
- 3 Add ginger and garlic paste, sauté until the raw smell disappears.
- 4 Add the duck meat pieces and sauté until they are lightly browned.
- 5 Mix in turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- 6 Peel and mash the ripe bhim kol (banana) and add it to the pan.
- 7 Stir well to combine the banana with the meat and spices.
- 8 Pour in water, cover, and let it simmer until the duck is cooked and tender.
- 9 Garnish with chopped coriander leaves before serving.
