Ingredients

1 cup ripe jackfruit pulp
1 cup rice flour
1 cup jaggery
1 teaspoon cardamom powder
1 pinch salt
as needed water
as needed oil for frying

Instructions

  1. 1 In a mixing bowl, combine the ripe jackfruit pulp and jaggery. Mix well until the jaggery dissolves completely.
  2. 2 Add rice flour, cardamom powder, and a pinch of salt to the jackfruit mixture.
  3. 3 Gradually add water to the mixture to form a thick, smooth batter.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Once the oil is hot, drop small spoonfuls of the batter into the oil.
  6. 6 Fry the happala until they are golden brown and crispy on both sides.
  7. 7 Remove the fried happala and drain excess oil on paper towels.
  8. 8 Serve warm as a snack or dessert.

Tips

Ensure the oil is not too hot to prevent the happala from browning too quickly before cooking through.
