Ingredients

1 cup ripe jackfruit pulp
1 cup raw rice
1 cup grated coconut
1 cup jaggery
0.5 teaspoon cardamom powder
ghee for frying
salt to taste

Instructions

  1. 1 Wash the raw rice thoroughly and soak it in water for 2-3 hours.
  2. 2 Drain the soaked rice and grind it along with grated coconut to a coarse paste, adding a little water if necessary.
  3. 3 In a mixing bowl, combine the ground rice-coconut paste with jackfruit pulp and jaggery.
  4. 4 Add cardamom powder and a pinch of salt to the mixture and mix well to form a thick batter.
  5. 5 Heat a small amount of ghee in a non-stick pan over medium heat.
  6. 6 Pour a ladleful of the batter onto the pan and spread it slightly to form a thick pancake.
  7. 7 Cook on low heat until the edges start to turn golden brown, then flip and cook the other side.
  8. 8 Repeat the process with the remaining batter, adding more ghee as needed.
  9. 9 Serve warm as a snack or dessert.

Tips

For a richer taste, use fresh jackfruit pulp and adjust jaggery according to the sweetness of the jackfruit.
