Ingredients
| 1 cup | ripe jackfruit pulp |
| 1 cup | raw rice |
| 1 cup | grated coconut |
| 1 cup | jaggery |
| 0.5 teaspoon | cardamom powder |
| — | ghee for frying |
| — | salt to taste |
Instructions
- 1 Wash the raw rice thoroughly and soak it in water for 2-3 hours.
- 2 Drain the soaked rice and grind it along with grated coconut to a coarse paste, adding a little water if necessary.
- 3 In a mixing bowl, combine the ground rice-coconut paste with jackfruit pulp and jaggery.
- 4 Add cardamom powder and a pinch of salt to the mixture and mix well to form a thick batter.
- 5 Heat a small amount of ghee in a non-stick pan over medium heat.
- 6 Pour a ladleful of the batter onto the pan and spread it slightly to form a thick pancake.
- 7 Cook on low heat until the edges start to turn golden brown, then flip and cook the other side.
- 8 Repeat the process with the remaining batter, adding more ghee as needed.
- 9 Serve warm as a snack or dessert.
Tips
For a richer taste, use fresh jackfruit pulp and adjust jaggery according to the sweetness of the jackfruit.
