Ingredients
| 1 cup | heikru (Indian gooseberry) |
| 1 tablespoon | mustard oil |
| 1 teaspoon | fenugreek seeds |
| 2 cloves | garlic |
| 1 inch | ginger |
| 2 cups | water |
| — | salt to taste |
| 1 teaspoon | sugar |
Instructions
- 1 Wash the heikru thoroughly and cut them into halves.
- 2 Peel and crush the garlic and ginger together to form a paste.
- 3 Heat mustard oil in a pan over medium heat.
- 4 Add fenugreek seeds to the hot oil and fry until they turn golden brown.
- 5 Add the garlic and ginger paste and sauté for a minute until fragrant.
- 6 Add the heikru pieces to the pan and stir well.
- 7 Pour in the water and bring the mixture to a boil.
- 8 Reduce the heat and let it simmer for about 20 minutes until the heikru is tender.
- 9 Add salt and sugar to taste, stirring well to combine.
- 10 Continue to cook for another 5 minutes until the flavors meld together.
- 11 Remove from heat and let it cool slightly before serving.
Tips
For a spicier version, add a chopped green chili along with the garlic and ginger paste.
