Ingredients

1 cup heikru (Indian gooseberry)
1 tablespoon mustard oil
1 teaspoon fenugreek seeds
2 cloves garlic
1 inch ginger
2 cups water
salt to taste
1 teaspoon sugar

Instructions

  1. 1 Wash the heikru thoroughly and cut them into halves.
  2. 2 Peel and crush the garlic and ginger together to form a paste.
  3. 3 Heat mustard oil in a pan over medium heat.
  4. 4 Add fenugreek seeds to the hot oil and fry until they turn golden brown.
  5. 5 Add the garlic and ginger paste and sauté for a minute until fragrant.
  6. 6 Add the heikru pieces to the pan and stir well.
  7. 7 Pour in the water and bring the mixture to a boil.
  8. 8 Reduce the heat and let it simmer for about 20 minutes until the heikru is tender.
  9. 9 Add salt and sugar to taste, stirring well to combine.
  10. 10 Continue to cook for another 5 minutes until the flavors meld together.
  11. 11 Remove from heat and let it cool slightly before serving.

Tips

For a spicier version, add a chopped green chili along with the garlic and ginger paste.
