Ingredients

1 cup fresh bamboo shoots
1 cup green peas
1 cup potatoes, diced
1 cup spinach leaves, chopped
1 teaspoon turmeric powder
1 teaspoon red chili powder
salt to taste
2 cups water
2 tablespoons mustard oil
1 teaspoon fenugreek seeds
2 cloves garlic, crushed
1 inch ginger, crushed

Instructions

  1. 1 Heat mustard oil in a pan and add fenugreek seeds.
  2. 2 Once the seeds turn brown, add crushed garlic and ginger.
  3. 3 Add the diced potatoes and sauté for 5 minutes.
  4. 4 Add bamboo shoots, green peas, and spinach leaves to the pan.
  5. 5 Stir in turmeric powder, red chili powder, and salt to taste.
  6. 6 Pour in the water and bring the mixture to a boil.
  7. 7 Reduce the heat and let it simmer until the vegetables are cooked and the flavors meld together.
  8. 8 Serve hot with steamed rice.

Tips

For a more authentic flavor, use fresh bamboo shoots and adjust the spice levels to your preference.
