Ingredients
| 1 cup | fresh bamboo shoots |
| 1 cup | green peas |
| 1 cup | potatoes, diced |
| 1 cup | spinach leaves, chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| — | salt to taste |
| 2 cups | water |
| 2 tablespoons | mustard oil |
| 1 teaspoon | fenugreek seeds |
| 2 cloves | garlic, crushed |
| 1 inch | ginger, crushed |
Instructions
- 1 Heat mustard oil in a pan and add fenugreek seeds.
- 2 Once the seeds turn brown, add crushed garlic and ginger.
- 3 Add the diced potatoes and sauté for 5 minutes.
- 4 Add bamboo shoots, green peas, and spinach leaves to the pan.
- 5 Stir in turmeric powder, red chili powder, and salt to taste.
- 6 Pour in the water and bring the mixture to a boil.
- 7 Reduce the heat and let it simmer until the vegetables are cooked and the flavors meld together.
- 8 Serve hot with steamed rice.
Tips
For a more authentic flavor, use fresh bamboo shoots and adjust the spice levels to your preference.
