Ingredients
| 1 cup | hurigadale (roasted gram/chana dal) |
| 1 medium | tomato, chopped |
| 1 small | onion, chopped |
| 2 cloves | garlic |
| 1 inch | ginger |
| 2 tablespoons | tamarind pulp |
| 1 teaspoon | jaggery |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 2 tablespoons | oil |
| 1 pinch | asafoetida |
| 1 teaspoon | turmeric powder |
| 2 teaspoons | red chili powder |
| — | salt to taste |
| 4 cups | water |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Grind the roasted gram, garlic, and ginger into a smooth paste using a little water.
- 2 Heat oil in a pan and add mustard seeds and cumin seeds.
- 3 Once they splutter, add asafoetida and chopped onions. Sauté until onions are translucent.
- 4 Add chopped tomatoes and cook until they become soft.
- 5 Add the ground paste to the pan and mix well.
- 6 Pour in the tamarind pulp, jaggery, turmeric powder, and red chili powder.
- 7 Add 4 cups of water and bring the mixture to a boil.
- 8 Season with salt to taste and let it simmer for 10-15 minutes.
- 9 Garnish with chopped coriander leaves before serving.
Tips
Adjust the consistency of the saaru by adding more or less water as per your preference.
