Ingredients

1 cup hurigadale (roasted gram/chana dal)
1 medium tomato, chopped
1 small onion, chopped
2 cloves garlic
1 inch ginger
2 tablespoons tamarind pulp
1 teaspoon jaggery
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 tablespoons oil
1 pinch asafoetida
1 teaspoon turmeric powder
2 teaspoons red chili powder
salt to taste
4 cups water
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Grind the roasted gram, garlic, and ginger into a smooth paste using a little water.
  2. 2 Heat oil in a pan and add mustard seeds and cumin seeds.
  3. 3 Once they splutter, add asafoetida and chopped onions. Sauté until onions are translucent.
  4. 4 Add chopped tomatoes and cook until they become soft.
  5. 5 Add the ground paste to the pan and mix well.
  6. 6 Pour in the tamarind pulp, jaggery, turmeric powder, and red chili powder.
  7. 7 Add 4 cups of water and bring the mixture to a boil.
  8. 8 Season with salt to taste and let it simmer for 10-15 minutes.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

Adjust the consistency of the saaru by adding more or less water as per your preference.
