A protein-rich side dish made with horse gram, seasoned with mustard seeds and curry leaves, commonly served with rotti or rice.

Ingredients

1 cup horse gram (huruli)
1 tablespoon coconut oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon chana dal
2 dried red chilies
1 pinch asafoetida (hing)
1 curry leaf sprig
1 cup grated fresh coconut
1 teaspoon jaggery
1 lemon
salt to taste
water as needed

Instructions

  1. 1 Wash the horse gram thoroughly and soak it in water for 6-8 hours or overnight.
  2. 2 Drain the soaked horse gram and transfer it to a pressure cooker.
  3. 3 Add enough water to the pressure cooker to cover the horse gram and pressure cook for 3-4 whistles or until soft.
  4. 4 In a pan, heat coconut oil over medium heat.
  5. 5 Add mustard seeds to the hot oil and let them splutter.
  6. 6 Add urad dal and chana dal to the pan and sauté until golden brown.
  7. 7 Add dried red chilies, asafoetida, and curry leaves, and sauté for a few seconds.
  8. 8 Add the cooked horse gram to the pan and mix well.
  9. 9 Add grated coconut, jaggery, and salt to taste. Stir everything together.
  10. 10 Cook for a few minutes until the flavors combine well.
  11. 11 Squeeze the juice of one lemon over the usli and mix well.
  12. 12 Serve hot as a snack or side dish.

Tips

For a richer flavor, you can add a tablespoon of ghee at the end before serving.
