Ingredients
| 1 cup | black gram (urad dal) |
| 1 cup | rice flour |
| 1 cup | jaggery |
| 1 cup | water |
| 1 teaspoon | cardamom powder |
| 1 pinch | salt |
| as needed | oil for frying |
Instructions
- 1 Wash the black gram thoroughly and soak it in water for 5-6 hours or overnight.
- 2 Drain the water and grind the soaked black gram into a smooth batter using minimal water.
- 3 In a bowl, mix the rice flour with the black gram batter to form a thick consistency.
- 4 In a separate pan, melt the jaggery with water over low heat to make a syrup.
- 5 Add the jaggery syrup to the batter along with cardamom powder and a pinch of salt. Mix well.
- 6 Let the batter rest for 15-20 minutes to allow the flavors to meld.
- 7 Heat oil in a deep frying pan over medium heat.
- 8 Once the oil is hot, drop small spoonfuls of the batter into the oil.
- 9 Fry the Hutuli until they are golden brown and crispy on the outside.
- 10 Remove the Hutuli from the oil and drain on paper towels to remove excess oil.
- 11 Serve warm as a snack or dessert.
Tips
Ensure the batter is thick enough to hold its shape when frying. Adjust the sweetness by varying the amount of jaggery.
