Ingredients

1 cup black gram (urad dal)
1 cup rice flour
1 cup jaggery
1 cup water
1 teaspoon cardamom powder
1 pinch salt
as needed oil for frying

Instructions

  1. 1 Wash the black gram thoroughly and soak it in water for 5-6 hours or overnight.
  2. 2 Drain the water and grind the soaked black gram into a smooth batter using minimal water.
  3. 3 In a bowl, mix the rice flour with the black gram batter to form a thick consistency.
  4. 4 In a separate pan, melt the jaggery with water over low heat to make a syrup.
  5. 5 Add the jaggery syrup to the batter along with cardamom powder and a pinch of salt. Mix well.
  6. 6 Let the batter rest for 15-20 minutes to allow the flavors to meld.
  7. 7 Heat oil in a deep frying pan over medium heat.
  8. 8 Once the oil is hot, drop small spoonfuls of the batter into the oil.
  9. 9 Fry the Hutuli until they are golden brown and crispy on the outside.
  10. 10 Remove the Hutuli from the oil and drain on paper towels to remove excess oil.
  11. 11 Serve warm as a snack or dessert.

Tips

Ensure the batter is thick enough to hold its shape when frying. Adjust the sweetness by varying the amount of jaggery.
