Ingredients
| 1 cup | urad dal (split black gram) |
| 1/4 cup | rice flour |
| 1/4 teaspoon | saffron food color |
| 2 cups | sugar |
| 1 cup | water |
| — | ghee for deep frying |
| 1/2 teaspoon | cardamom powder |
| 1 teaspoon | rose water |
Instructions
- 1 Wash and soak the urad dal in water for 4 hours.
- 2 Drain the water and grind the urad dal to a smooth batter, adding a little water if necessary.
- 3 Add rice flour and saffron food color to the batter and mix well.
- 4 Transfer the batter to a piping bag with a small nozzle.
- 5 In a pan, combine sugar and water to make a sugar syrup. Boil until it reaches a one-string consistency.
- 6 Add cardamom powder and rose water to the sugar syrup and mix well. Keep it warm.
- 7 Heat ghee in a wide pan for deep frying.
- 8 Pipe the batter in a circular pattern into the hot ghee to form imartis.
- 9 Fry the imartis until they are golden and crisp on both sides.
- 10 Remove the imartis from the ghee and immediately dip them in the warm sugar syrup for a few seconds.
- 11 Remove from the syrup and let them drain on a wire rack.
Tips
Ensure the sugar syrup is warm when dipping the imartis for better absorption.
