Ingredients

1 cup urad dal (split black gram)
1/4 cup rice flour
1/4 teaspoon saffron food color
2 cups sugar
1 cup water
ghee for deep frying
1/2 teaspoon cardamom powder
1 teaspoon rose water

Instructions

  1. 1 Wash and soak the urad dal in water for 4 hours.
  2. 2 Drain the water and grind the urad dal to a smooth batter, adding a little water if necessary.
  3. 3 Add rice flour and saffron food color to the batter and mix well.
  4. 4 Transfer the batter to a piping bag with a small nozzle.
  5. 5 In a pan, combine sugar and water to make a sugar syrup. Boil until it reaches a one-string consistency.
  6. 6 Add cardamom powder and rose water to the sugar syrup and mix well. Keep it warm.
  7. 7 Heat ghee in a wide pan for deep frying.
  8. 8 Pipe the batter in a circular pattern into the hot ghee to form imartis.
  9. 9 Fry the imartis until they are golden and crisp on both sides.
  10. 10 Remove the imartis from the ghee and immediately dip them in the warm sugar syrup for a few seconds.
  11. 11 Remove from the syrup and let them drain on a wire rack.

Tips

Ensure the sugar syrup is warm when dipping the imartis for better absorption.
