Ingredients

1 cup tamarind pulp
1 cup jaggery
1 teaspoon red chili powder
1 teaspoon roasted cumin powder
1 teaspoon black salt
1 teaspoon salt
1 cup water
1 tablespoon oil
1 teaspoon mustard seeds
1 pinch asafoetida

Instructions

  1. 1 In a pan, heat oil over medium flame and add mustard seeds.
  2. 2 Once the mustard seeds start to splutter, add a pinch of asafoetida.
  3. 3 Add the tamarind pulp and water to the pan and stir well.
  4. 4 Add jaggery to the mixture and cook until it dissolves completely.
  5. 5 Mix in red chili powder, roasted cumin powder, black salt, and salt.
  6. 6 Cook the mixture on low flame until it thickens to a chutney consistency, stirring occasionally.
  7. 7 Remove from heat and let it cool before serving.

Tips

Adjust the jaggery amount to balance the sweetness and tanginess according to your taste.
