Ingredients
| 1 cup | jareesh (cracked wheat) |
| 300 grams | chicken breast, cut into cubes |
| 1 medium | onion, finely chopped |
| 2 tablespoons | ghee |
| 1 teaspoon | ground cumin |
| 1 teaspoon | ground coriander |
| 1 teaspoon | ground black pepper |
| 1 teaspoon | ground cinnamon |
| 2 cups | chicken broth |
| — | salt to taste |
| 2 cups | water |
| — | fresh cilantro for garnish |
Instructions
- 1 Rinse the jareesh under cold water and soak it in water for 30 minutes, then drain.
- 2 In a large pot, heat the ghee over medium heat and sauté the chopped onion until translucent.
- 3 Add the chicken cubes to the pot and cook until they are browned on all sides.
- 4 Stir in the ground cumin, coriander, black pepper, and cinnamon, cooking for another 2 minutes.
- 5 Add the soaked jareesh to the pot and stir to combine with the chicken and spices.
- 6 Pour in the chicken broth and water, and season with salt to taste.
- 7 Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the jareesh is tender and the liquid is absorbed.
- 8 Stir occasionally to prevent sticking, and adjust seasoning if necessary.
- 9 Serve hot, garnished with fresh cilantro.
Tips
For a richer flavor, you can add a pinch of saffron soaked in warm water to the dish before serving.
