Ingredients

1 cup jareesh (cracked wheat)
300 grams chicken breast, cut into cubes
1 medium onion, finely chopped
2 tablespoons ghee
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
2 cups chicken broth
salt to taste
2 cups water
fresh cilantro for garnish

Instructions

  1. 1 Rinse the jareesh under cold water and soak it in water for 30 minutes, then drain.
  2. 2 In a large pot, heat the ghee over medium heat and sauté the chopped onion until translucent.
  3. 3 Add the chicken cubes to the pot and cook until they are browned on all sides.
  4. 4 Stir in the ground cumin, coriander, black pepper, and cinnamon, cooking for another 2 minutes.
  5. 5 Add the soaked jareesh to the pot and stir to combine with the chicken and spices.
  6. 6 Pour in the chicken broth and water, and season with salt to taste.
  7. 7 Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the jareesh is tender and the liquid is absorbed.
  8. 8 Stir occasionally to prevent sticking, and adjust seasoning if necessary.
  9. 9 Serve hot, garnished with fresh cilantro.

Tips

For a richer flavor, you can add a pinch of saffron soaked in warm water to the dish before serving.
