Ingredients

1 cup sticky rice
200 grams pork belly, cut into small pieces
1 tablespoon mustard oil
1 teaspoon turmeric powder
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon red chili powder
1 cup water
salt to taste
2 bay leaves
1 small onion, finely chopped
2 green chilies, slit

Instructions

  1. 1 Wash the sticky rice thoroughly and soak it in water for 30 minutes.
  2. 2 Heat mustard oil in a pan and add the bay leaves.
  3. 3 Add the chopped onion and sauté until translucent.
  4. 4 Add ginger paste, garlic paste, and sauté for a minute.
  5. 5 Add the pork belly pieces and cook until they start to brown.
  6. 6 Stir in turmeric powder, red chili powder, and salt.
  7. 7 Drain the soaked rice and add it to the pan, stirring gently to mix.
  8. 8 Add water and bring it to a boil.
  9. 9 Reduce the heat, cover, and simmer until the rice is cooked and the water is absorbed.
  10. 10 Add the slit green chilies and let it sit covered for a few minutes before serving.

Tips

For a smokier flavor, roast the pork belly slightly before adding it to the pan.
