Ingredients
| 1 cup | sticky rice |
| 200 grams | pork belly, cut into small pieces |
| 1 tablespoon | mustard oil |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | ginger paste |
| 1 teaspoon | garlic paste |
| 1 teaspoon | red chili powder |
| 1 cup | water |
| — | salt to taste |
| 2 | bay leaves |
| 1 | small onion, finely chopped |
| 2 | green chilies, slit |
Instructions
- 1 Wash the sticky rice thoroughly and soak it in water for 30 minutes.
- 2 Heat mustard oil in a pan and add the bay leaves.
- 3 Add the chopped onion and sauté until translucent.
- 4 Add ginger paste, garlic paste, and sauté for a minute.
- 5 Add the pork belly pieces and cook until they start to brown.
- 6 Stir in turmeric powder, red chili powder, and salt.
- 7 Drain the soaked rice and add it to the pan, stirring gently to mix.
- 8 Add water and bring it to a boil.
- 9 Reduce the heat, cover, and simmer until the rice is cooked and the water is absorbed.
- 10 Add the slit green chilies and let it sit covered for a few minutes before serving.
Tips
For a smokier flavor, roast the pork belly slightly before adding it to the pan.
