Ingredients

500 grams mutton, cut into pieces
2 tablespoons mustard oil
2 medium onions, finely sliced
1 tablespoon ginger-garlic paste
2 medium tomatoes, chopped
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
2 pieces bay leaves
4 pieces green cardamoms
4 pieces cloves
1 inch cinnamon stick
2 cups water
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat mustard oil in a heavy-bottomed pan until it starts smoking.
  2. 2 Add bay leaves, green cardamoms, cloves, and cinnamon stick. Sauté for a few seconds until fragrant.
  3. 3 Add the sliced onions and sauté until golden brown.
  4. 4 Stir in the ginger-garlic paste and sauté for another minute.
  5. 5 Add chopped tomatoes and cook until they become soft and oil starts to separate.
  6. 6 Mix in turmeric powder, red chili powder, coriander powder, and cumin powder. Cook for 2 minutes.
  7. 7 Add the mutton pieces and sauté on high heat for 5-7 minutes until they are browned.
  8. 8 Pour in water and add salt to taste. Stir well.
  9. 9 Cover the pan and let it simmer on low heat for about 30-40 minutes or until the mutton is tender.
  10. 10 Sprinkle garam masala and mix well. Cook for another 5 minutes.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, marinate the mutton in yogurt and spices for at least an hour before cooking.
