Jharkhand Mutton Curry
Goat meat cooked tribal-style over a wood fire — the pieces are first dry-roasted in a hot pan to sear the exterior, then simmered in a mustard oil-based gravy of onion, ginger, garlic, tomato, and a handful of whole spices. The tribal method skips the elaborate ground masala pastes of mainstream Indian cooking, letting the quality of the country goat and the smoke of the wood fire carry the dish.

Ingredients
| 500 grams | mutton, cut into pieces |
| 2 tablespoons | mustard oil |
| 2 medium | onions, finely sliced |
| 1 tablespoon | ginger-garlic paste |
| 2 medium | tomatoes, chopped |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin powder |
| 1 teaspoon | garam masala |
| 2 pieces | bay leaves |
| 4 pieces | green cardamoms |
| 4 pieces | cloves |
| 1 inch | cinnamon stick |
| 2 cups | water |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Heat mustard oil in a heavy-bottomed pan until it starts smoking.
- 2 Add bay leaves, green cardamoms, cloves, and cinnamon stick. Sauté for a few seconds until fragrant.
- 3 Add the sliced onions and sauté until golden brown.
- 4 Stir in the ginger-garlic paste and sauté for another minute.
- 5 Add chopped tomatoes and cook until they become soft and oil starts to separate.
- 6 Mix in turmeric powder, red chili powder, coriander powder, and cumin powder. Cook for 2 minutes.
- 7 Add the mutton pieces and sauté on high heat for 5-7 minutes until they are browned.
- 8 Pour in water and add salt to taste. Stir well.
- 9 Cover the pan and let it simmer on low heat for about 30-40 minutes or until the mutton is tender.
- 10 Sprinkle garam masala and mix well. Cook for another 5 minutes.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, marinate the mutton in yogurt and spices for at least an hour before cooking.
