Ingredients

1 medium raw mango
1 cup sugar
1 cup water
1 teaspoon mustard seeds
1 teaspoon panch phoron
2 pieces dry red chilies
1 pinch salt
1 tablespoon mustard oil
1 teaspoon turmeric powder

Instructions

  1. 1 Peel the raw mango and cut it into small cubes.
  2. 2 Heat mustard oil in a pan over medium heat.
  3. 3 Add mustard seeds, panch phoron, and dry red chilies to the oil and let them splutter.
  4. 4 Add the mango cubes to the pan and stir well.
  5. 5 Sprinkle turmeric powder and a pinch of salt over the mangoes and mix.
  6. 6 Pour in the water and bring it to a boil.
  7. 7 Add sugar and stir until it dissolves completely.
  8. 8 Simmer the chutney on low heat until the mango pieces are cooked and the chutney thickens to your desired consistency.
  9. 9 Remove from heat and let it cool before serving.

Tips

Adjust the amount of sugar based on the sourness of the mangoes.
