Ingredients

500 grams pork, cut into small cubes
2 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 tablespoons coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon black pepper powder
1 tablespoon ginger-garlic paste
2 medium onions, finely chopped
2 medium tomatoes, chopped
2 tablespoons kachampuli (Coorg vinegar)
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat oil in a large pan over medium heat.
  2. 2 Add mustard seeds and cumin seeds, allowing them to splutter.
  3. 3 Add chopped onions and sauté until golden brown.
  4. 4 Stir in the ginger-garlic paste and sauté for another 2 minutes.
  5. 5 Add chopped tomatoes and cook until they are soft and oil starts to separate.
  6. 6 Mix in coriander powder, turmeric powder, red chili powder, and black pepper powder.
  7. 7 Add the pork cubes and stir well to coat them with the spices.
  8. 8 Season with salt to taste and cook for about 10 minutes, stirring occasionally.
  9. 9 Pour in the kachampuli and mix thoroughly.
  10. 10 Cover the pan and let the pork simmer on low heat for about 30 minutes, or until the pork is tender and cooked through.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, marinate the pork with the spices for an hour before cooking.
