Ingredients
| 500 grams | pork, cut into small cubes |
| 2 tablespoons | vegetable oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 2 tablespoons | coriander powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | black pepper powder |
| 1 tablespoon | ginger-garlic paste |
| 2 medium | onions, finely chopped |
| 2 medium | tomatoes, chopped |
| 2 tablespoons | kachampuli (Coorg vinegar) |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Heat oil in a large pan over medium heat.
- 2 Add mustard seeds and cumin seeds, allowing them to splutter.
- 3 Add chopped onions and sauté until golden brown.
- 4 Stir in the ginger-garlic paste and sauté for another 2 minutes.
- 5 Add chopped tomatoes and cook until they are soft and oil starts to separate.
- 6 Mix in coriander powder, turmeric powder, red chili powder, and black pepper powder.
- 7 Add the pork cubes and stir well to coat them with the spices.
- 8 Season with salt to taste and cook for about 10 minutes, stirring occasionally.
- 9 Pour in the kachampuli and mix thoroughly.
- 10 Cover the pan and let the pork simmer on low heat for about 30 minutes, or until the pork is tender and cooked through.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, marinate the pork with the spices for an hour before cooking.
