Kadalai Urundai is a traditional South Indian sweet made with roasted peanuts and jaggery. These crunchy and sweet balls are a popular snack, especially during festivals.

Ingredients

1 cup jaggery
1 cup roasted peanuts
1 tablespoon ghee
1 teaspoon cardamom powder

Instructions

  1. 1 Crush the roasted peanuts coarsely using a mortar and pestle or a rolling pin.
  2. 2 In a heavy-bottomed pan, add the jaggery and a tablespoon of water.
  3. 3 Heat the pan on a medium flame, stirring continuously until the jaggery melts and begins to bubble.
  4. 4 Add the cardamom powder to the melted jaggery and mix well.
  5. 5 Quickly add the crushed peanuts to the jaggery mixture and stir until the peanuts are well coated.
  6. 6 Grease your palms with a little ghee to prevent sticking.
  7. 7 While the mixture is still warm, take small portions and shape them into round balls (urundai).
  8. 8 Allow the kadalai urundai to cool completely and harden before serving.

Tips

Ensure the jaggery syrup reaches a soft ball stage for the perfect texture. If it hardens too quickly, reheat gently.
