Ingredients
| 1 cup | jaggery |
| 1 cup | roasted peanuts |
| 1 tablespoon | ghee |
| 1 teaspoon | cardamom powder |
Instructions
- 1 Crush the roasted peanuts coarsely using a mortar and pestle or a rolling pin.
- 2 In a heavy-bottomed pan, add the jaggery and a tablespoon of water.
- 3 Heat the pan on a medium flame, stirring continuously until the jaggery melts and begins to bubble.
- 4 Add the cardamom powder to the melted jaggery and mix well.
- 5 Quickly add the crushed peanuts to the jaggery mixture and stir until the peanuts are well coated.
- 6 Grease your palms with a little ghee to prevent sticking.
- 7 While the mixture is still warm, take small portions and shape them into round balls (urundai).
- 8 Allow the kadalai urundai to cool completely and harden before serving.
Tips
Ensure the jaggery syrup reaches a soft ball stage for the perfect texture. If it hardens too quickly, reheat gently.
