Ingredients

2 medium bitter gourds (kakarakaya)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida (hing)
1 teaspoon turmeric powder
1 tablespoon red chili powder
1 tablespoon coriander powder
1 teaspoon garam masala
1 salt to taste
1 tablespoon lemon juice
1 tablespoon chopped fresh coriander leaves

Instructions

  1. 1 Wash the bitter gourds thoroughly and slice them into thin rounds.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and cumin seeds to the hot oil and let them splutter.
  4. 4 Add a pinch of asafoetida and the sliced bitter gourds to the pan.
  5. 5 Stir well and add turmeric powder, red chili powder, coriander powder, and salt.
  6. 6 Mix everything well and cook on low heat, stirring occasionally, until the bitter gourds become crispy and golden brown.
  7. 7 Add garam masala and lemon juice, and mix well.
  8. 8 Garnish with chopped coriander leaves before serving.

Tips

For a less bitter taste, soak the sliced bitter gourds in salted water for 15 minutes before cooking.
