Ingredients
| 2 medium | bitter gourds (kakarakaya) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida (hing) |
| 1 teaspoon | turmeric powder |
| 1 tablespoon | red chili powder |
| 1 tablespoon | coriander powder |
| 1 teaspoon | garam masala |
| 1 | salt to taste |
| 1 tablespoon | lemon juice |
| 1 tablespoon | chopped fresh coriander leaves |
Instructions
- 1 Wash the bitter gourds thoroughly and slice them into thin rounds.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and cumin seeds to the hot oil and let them splutter.
- 4 Add a pinch of asafoetida and the sliced bitter gourds to the pan.
- 5 Stir well and add turmeric powder, red chili powder, coriander powder, and salt.
- 6 Mix everything well and cook on low heat, stirring occasionally, until the bitter gourds become crispy and golden brown.
- 7 Add garam masala and lemon juice, and mix well.
- 8 Garnish with chopped coriander leaves before serving.
Tips
For a less bitter taste, soak the sliced bitter gourds in salted water for 15 minutes before cooking.
