Ingredients

1 cup all-purpose flour
2 tablespoons ghee
1 pinch baking soda
1 cup sugar
1 cup water
1 teaspoon cardamom powder
as needed oil for deep frying

Instructions

  1. 1 In a bowl, mix the all-purpose flour, ghee, and baking soda. Add enough water to make a soft dough. Cover and let it rest for 20 minutes.
  2. 2 Meanwhile, prepare the sugar syrup by boiling sugar and water together until it reaches a one-string consistency. Add cardamom powder and set aside.
  3. 3 Divide the dough into small portions and roll each into a thin oval shape.
  4. 4 Fold the oval dough into half and then again into a quarter, pressing lightly to seal the edges.
  5. 5 Heat oil in a deep frying pan. Once hot, fry the prepared dough pieces on medium heat until they turn golden brown and crisp.
  6. 6 Remove from oil and immediately dip them into the warm sugar syrup. Let them soak for a minute, ensuring they are well-coated.
  7. 7 Remove from syrup and let them cool on a plate.

Tips

Ensure the sugar syrup is warm, not hot, when soaking the fried dough to maintain crispiness.
