Ingredients
| 1 cup | raw rice |
| 1/4 cup | urad dal |
| 1/2 teaspoon | fenugreek seeds |
| to taste | salt |
| as needed | water |
| as needed | oil for cooking |
Instructions
- 1 Wash the rice, urad dal, and fenugreek seeds thoroughly.
- 2 Soak the rice, urad dal, and fenugreek seeds together in water for at least 4 hours.
- 3 Drain the soaked ingredients and grind them into a smooth batter using a little water.
- 4 Transfer the batter to a large bowl and add salt to taste.
- 5 Cover the bowl and let the batter ferment overnight or for about 8 hours.
- 6 Once fermented, mix the batter well. It should be of pouring consistency.
- 7 Heat a dosa tawa or a non-stick pan over medium heat and lightly grease it with oil.
- 8 Pour a ladleful of batter onto the pan and spread it slightly to form a thick dosa.
- 9 Drizzle a little oil around the edges and cook until the bottom is golden brown.
- 10 Flip the dosa and cook the other side for a minute or until done.
- 11 Remove from the pan and repeat with the remaining batter.
- 12 Serve hot with chutney or sambar.

Ensure the batter is well-fermented for soft and fluffy dosas.
