Ingredients

1 cup raw rice
1/4 cup urad dal
1/2 teaspoon fenugreek seeds
to taste salt
as needed water
as needed oil for cooking

Instructions

  1. 1 Wash the rice, urad dal, and fenugreek seeds thoroughly.
  2. 2 Soak the rice, urad dal, and fenugreek seeds together in water for at least 4 hours.
  3. 3 Drain the soaked ingredients and grind them into a smooth batter using a little water.
  4. 4 Transfer the batter to a large bowl and add salt to taste.
  5. 5 Cover the bowl and let the batter ferment overnight or for about 8 hours.
  6. 6 Once fermented, mix the batter well. It should be of pouring consistency.
  7. 7 Heat a dosa tawa or a non-stick pan over medium heat and lightly grease it with oil.
  8. 8 Pour a ladleful of batter onto the pan and spread it slightly to form a thick dosa.
  9. 9 Drizzle a little oil around the edges and cook until the bottom is golden brown.
  10. 10 Flip the dosa and cook the other side for a minute or until done.
  11. 11 Remove from the pan and repeat with the remaining batter.
  12. 12 Serve hot with chutney or sambar.

Ensure the batter is well-fermented for soft and fluffy dosas.
