Ingredients
| 1 medium | kananga (elephant foot yam) |
| 1 teaspoon | turmeric powder |
| 1 tablespoon | red chili powder |
| to taste | salt |
| 1 cup | rice flour |
| as needed | water |
| for shallow frying | oil |
Instructions
- 1 Peel the kananga and slice it into thin, round pieces.
- 2 In a bowl, mix turmeric powder, red chili powder, and salt.
- 3 Coat the kananga slices with the spice mixture evenly.
- 4 In another bowl, prepare a thick batter by mixing rice flour with enough water and a pinch of salt.
- 5 Heat oil in a pan for shallow frying.
- 6 Dip each spiced kananga slice into the rice flour batter, ensuring it is coated well.
- 7 Place the coated slices in the hot oil and fry on medium heat until golden brown and crispy on both sides.
- 8 Remove from oil and drain on paper towels to remove excess oil.

Ensure the oil is hot enough before frying to achieve a crispy texture.
