Ingredients

1 medium kananga (elephant foot yam)
1 teaspoon turmeric powder
1 tablespoon red chili powder
to taste salt
1 cup rice flour
as needed water
for shallow frying oil

Instructions

  1. 1 Peel the kananga and slice it into thin, round pieces.
  2. 2 In a bowl, mix turmeric powder, red chili powder, and salt.
  3. 3 Coat the kananga slices with the spice mixture evenly.
  4. 4 In another bowl, prepare a thick batter by mixing rice flour with enough water and a pinch of salt.
  5. 5 Heat oil in a pan for shallow frying.
  6. 6 Dip each spiced kananga slice into the rice flour batter, ensuring it is coated well.
  7. 7 Place the coated slices in the hot oil and fry on medium heat until golden brown and crispy on both sides.
  8. 8 Remove from oil and drain on paper towels to remove excess oil.

Ensure the oil is hot enough before frying to achieve a crispy texture.
