Ingredients

1.5 cups thick poha (flattened rice)
1 medium onion, finely chopped
1 medium potato, peeled and diced
2 tablespoons peanuts
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon sugar
salt to taste
2 tablespoons fresh coriander leaves, chopped
1 green chili, finely chopped
1 tablespoon lemon juice
fresh grated coconut for garnish (optional)

Instructions

  1. 1 Rinse the poha in a colander under running water until they soften, then set aside to drain completely.
  2. 2 Heat oil in a pan over medium heat and add mustard seeds. Allow them to splutter.
  3. 3 Add peanuts and sauté until they are golden brown.
  4. 4 Add chopped onions and green chili to the pan, sauté until the onions turn translucent.
  5. 5 Add diced potatoes and cook until they are tender.
  6. 6 Stir in turmeric powder, sugar, and salt.
  7. 7 Gently mix the softened poha into the pan, ensuring it is well-coated with the spices.
  8. 8 Cover the pan and let it cook on low heat for 3-4 minutes.
  9. 9 Turn off the heat and add lemon juice and chopped coriander leaves. Mix well.
  10. 10 Garnish with fresh grated coconut if using, and serve hot.

Tips

For added texture, you can add a handful of roasted chana dal along with the peanuts.
