Ingredients
| 1.5 cups | thick poha (flattened rice) |
| 1 medium | onion, finely chopped |
| 1 medium | potato, peeled and diced |
| 2 tablespoons | peanuts |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | sugar |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 | green chili, finely chopped |
| 1 tablespoon | lemon juice |
| — | fresh grated coconut for garnish (optional) |
Instructions
- 1 Rinse the poha in a colander under running water until they soften, then set aside to drain completely.
- 2 Heat oil in a pan over medium heat and add mustard seeds. Allow them to splutter.
- 3 Add peanuts and sauté until they are golden brown.
- 4 Add chopped onions and green chili to the pan, sauté until the onions turn translucent.
- 5 Add diced potatoes and cook until they are tender.
- 6 Stir in turmeric powder, sugar, and salt.
- 7 Gently mix the softened poha into the pan, ensuring it is well-coated with the spices.
- 8 Cover the pan and let it cook on low heat for 3-4 minutes.
- 9 Turn off the heat and add lemon juice and chopped coriander leaves. Mix well.
- 10 Garnish with fresh grated coconut if using, and serve hot.
Tips
For added texture, you can add a handful of roasted chana dal along with the peanuts.
