Ingredients

1 cup coarse wheat flour
1 cup jaggery
2 tablespoons ghee
2 cups water
1 teaspoon cardamom powder
2 tablespoons chopped nuts (almonds and cashews)
a pinch of salt

Instructions

  1. 1 Heat ghee in a pan and add the coarse wheat flour.
  2. 2 Roast the flour on low heat until it turns golden brown and releases a nutty aroma.
  3. 3 In a separate saucepan, bring water to a boil and add jaggery. Stir until the jaggery dissolves completely.
  4. 4 Add the jaggery syrup to the roasted flour slowly, stirring continuously to avoid lumps.
  5. 5 Cook the mixture on low heat, stirring continuously until it thickens and leaves the sides of the pan.
  6. 6 Add cardamom powder and a pinch of salt, and mix well.
  7. 7 Garnish with chopped nuts and serve warm.

Tips

Roasting the flour properly is key to enhancing the flavor of Kansar.
