Ingredients
| 1 cup | coarse wheat flour |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 2 cups | water |
| 1 teaspoon | cardamom powder |
| 2 tablespoons | chopped nuts (almonds and cashews) |
| — | a pinch of salt |
Instructions
- 1 Heat ghee in a pan and add the coarse wheat flour.
- 2 Roast the flour on low heat until it turns golden brown and releases a nutty aroma.
- 3 In a separate saucepan, bring water to a boil and add jaggery. Stir until the jaggery dissolves completely.
- 4 Add the jaggery syrup to the roasted flour slowly, stirring continuously to avoid lumps.
- 5 Cook the mixture on low heat, stirring continuously until it thickens and leaves the sides of the pan.
- 6 Add cardamom powder and a pinch of salt, and mix well.
- 7 Garnish with chopped nuts and serve warm.
Tips
Roasting the flour properly is key to enhancing the flavor of Kansar.
