Ingredients

1 large | Bitter Gourd , sliced |

1 cup | Coconut , freshly grated |
|
1 medium | Onion , thinly sliced |
|
2 tablespoons | Coconut oil |
|
1 teaspoon | Mustard Seed |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Tamarind paste |
|
1 teaspoon | Jaggery |
|
— | Salt , to taste |
Instructions
- 1 Wash the bitter gourd thoroughly and cut it into thin slices.
- 2 Heat 1 tablespoon of coconut oil in a pan over medium heat.
- 3 Add the sliced bitter gourd and sauté until they turn golden brown and crispy. Remove and set aside.
- 4 In the same pan, add another tablespoon of coconut oil.
- 5 Add mustard seeds and let them splutter.
- 6 Add finely chopped onion and sauté until translucent.
- 7 Add turmeric powder, red chili powder, and sauté for a minute.
- 8 Add the grated coconut and mix well.
- 9 Add tamarind paste, jaggery, and salt. Stir until the jaggery dissolves.
- 10 Finally, add the fried bitter gourd slices and mix everything well.
- 11 Cook for another 2-3 minutes, stirring occasionally. Serve warm.
Tips
For a less bitter taste, soak the sliced bitter gourd in salted water for 15 minutes before cooking.
