Ingredients

1 large bitter gourd (karathe)
1 cup freshly grated coconut
1 medium onion
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon tamarind paste
1 teaspoon jaggery
salt to taste

Instructions

  1. 1 Wash the bitter gourd thoroughly and cut it into thin slices.
  2. 2 Heat 1 tablespoon of coconut oil in a pan over medium heat.
  3. 3 Add the sliced bitter gourd and sauté until they turn golden brown and crispy. Remove and set aside.
  4. 4 In the same pan, add another tablespoon of coconut oil.
  5. 5 Add mustard seeds and let them splutter.
  6. 6 Add finely chopped onion and sauté until translucent.
  7. 7 Add turmeric powder, red chili powder, and sauté for a minute.
  8. 8 Add the grated coconut and mix well.
  9. 9 Add tamarind paste, jaggery, and salt. Stir until the jaggery dissolves.
  10. 10 Finally, add the fried bitter gourd slices and mix everything well.
  11. 11 Cook for another 2-3 minutes, stirring occasionally. Serve warm.

Tips

For a less bitter taste, soak the sliced bitter gourd in salted water for 15 minutes before cooking.
