Ingredients
| 2 medium | bitter gourds (karathe) |
| 1 tablespoon | coriander seeds |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | black peppercorns |
| 1 tablespoon | urad dal (split black gram) |
| 1 tablespoon | chana dal (split chickpeas) |
| 2 tablespoons | grated coconut |
| 4-5 | dried red chilies |
| 1 tablespoon | tamarind pulp |
| 1 teaspoon | jaggery |
| — | salt to taste |
| 2 teaspoons | oil |
Instructions
- 1 Wash the bitter gourds thoroughly and slice them into thin rounds.
- 2 Heat 1 teaspoon of oil in a pan and fry the bitter gourd slices until they turn golden brown. Remove and set aside.
- 3 In the same pan, add another teaspoon of oil and roast the coriander seeds, cumin seeds, black peppercorns, urad dal, chana dal, and dried red chilies until they are aromatic.
- 4 Add the grated coconut to the pan and roast until it turns light brown. Allow the mixture to cool.
- 5 Once cooled, grind the roasted spices and coconut mixture into a fine powder.
- 6 Mix the tamarind pulp, jaggery, and salt with the ground spice powder.
- 7 Add the fried bitter gourd slices to the spice mixture and mix well to coat them evenly.
- 8 Serve the Karathe Podi as a side dish with rice or chapati.
Tips
Adjust the number of dried red chilies according to your spice preference. Store the podi in an airtight container for longer shelf life.
