Ingredients

Flour 1 cup Flour
Semolina 1 cup Semolina
ghee 1/4 cup Ghee
Coconut 1/2 cup Coconut , grated, dry
jaggery 1/2 cup Jaggery , powdered
cardamom 1 teaspoon Cardamom , powder
Poppy Seed 1 tablespoon Poppy Seed
Sesame Seed 1 tablespoon Sesame Seed
water Water , as needed
oil Oil , for deep frying
salt Salt , to taste

Instructions

  1. 1 In a bowl, mix all-purpose flour, semolina, and a pinch of salt.
  2. 2 Add ghee to the flour mixture and mix until it resembles breadcrumbs.
  3. 3 Gradually add water and knead into a firm dough. Cover and let it rest for 20 minutes.
  4. 4 In a pan, dry roast grated dry coconut until golden brown. Set aside.
  5. 5 In the same pan, roast poppy seeds and sesame seeds until they start to pop.
  6. 6 Mix the roasted coconut, poppy seeds, sesame seeds, powdered jaggery, and cardamom powder to form the filling.
  7. 7 Divide the dough into small balls and roll each into a small circle.
  8. 8 Place a spoonful of filling in the center of the circle, fold it over, and seal the edges by pressing with a fork.
  9. 9 Heat oil in a deep pan and fry the karchikai until golden brown.
  10. 10 Drain on paper towels and let them cool before serving.

Tips

Ensure the oil is hot enough before frying to avoid the karchikai absorbing excess oil.
