Ingredients
| 1 cup | all-purpose flour |
| 1 cup | semolina |
| 1/4 teaspoon | salt |
| 2 tablespoons | ghee |
| 1 cup | jaggery |
| 1 cup | grated coconut |
| 1/2 teaspoon | cardamom powder |
| 2 tablespoons | chopped cashew nuts |
| 2 tablespoons | raisins |
| 1 cup | water |
| — | oil for deep frying |
Instructions
- 1 In a bowl, mix all-purpose flour, semolina, salt, and ghee. Add water gradually and knead into a soft dough. Cover and set aside for 20 minutes.
- 2 In a pan, melt jaggery with a little water until it dissolves. Strain to remove impurities.
- 3 Return the jaggery syrup to the pan and add grated coconut. Cook until the mixture thickens.
- 4 Add cardamom powder, chopped cashew nuts, and raisins to the mixture. Stir well and let it cool.
- 5 Divide the dough into small balls. Roll each ball into a small circle.
- 6 Place a spoonful of the coconut-jaggery mixture in the center of each circle. Fold and seal the edges to form a semi-circle.
- 7 Heat oil in a deep frying pan. Fry the Karchikai Holige until golden brown and crisp.
- 8 Drain on paper towels and serve warm.
Tips
Ensure the dough is soft and pliable to prevent cracking while frying.
