Ingredients

1 cup all-purpose flour
1 cup semolina
1/4 teaspoon salt
2 tablespoons ghee
1 cup jaggery
1 cup grated coconut
1/2 teaspoon cardamom powder
2 tablespoons chopped cashew nuts
2 tablespoons raisins
1 cup water
oil for deep frying

Instructions

  1. 1 In a bowl, mix all-purpose flour, semolina, salt, and ghee. Add water gradually and knead into a soft dough. Cover and set aside for 20 minutes.
  2. 2 In a pan, melt jaggery with a little water until it dissolves. Strain to remove impurities.
  3. 3 Return the jaggery syrup to the pan and add grated coconut. Cook until the mixture thickens.
  4. 4 Add cardamom powder, chopped cashew nuts, and raisins to the mixture. Stir well and let it cool.
  5. 5 Divide the dough into small balls. Roll each ball into a small circle.
  6. 6 Place a spoonful of the coconut-jaggery mixture in the center of each circle. Fold and seal the edges to form a semi-circle.
  7. 7 Heat oil in a deep frying pan. Fry the Karchikai Holige until golden brown and crisp.
  8. 8 Drain on paper towels and serve warm.

Tips

Ensure the dough is soft and pliable to prevent cracking while frying.
