Ingredients

1 cup chana dal (split chickpeas)
1 cup urad dal (split black gram)
2 tablespoons ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
2 tablespoons oil
1 onion, finely chopped
1 green chili, finely chopped
2 tablespoons fresh coriander leaves, chopped
1 lemon, juiced
salt to taste
1 banana leaf or parchment paper for steaming

Instructions

  1. 1 Wash and soak the chana dal and urad dal together in water for 4-5 hours.
  2. 2 Drain the soaked dal and grind it to a coarse paste without adding water.
  3. 3 In a mixing bowl, combine the ground dal paste, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt.
  4. 4 Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
  5. 5 Add chopped onion and green chili to the pan and sauté until the onion turns translucent.
  6. 6 Add the sautéed onion mixture to the dal paste and mix well.
  7. 7 Take a portion of the mixture and shape it into a small patty or vada.
  8. 8 Place the vadas on a banana leaf or parchment paper and steam them for about 15-20 minutes until cooked through.
  9. 9 Once steamed, remove the vadas and let them cool slightly.
  10. 10 Before serving, drizzle lemon juice over the vadas and garnish with fresh coriander leaves.

Tips

For a smoky flavor, you can lightly roast the vadas on a hot griddle after steaming.
