Ingredients
| 1 cup | chana dal (split chickpeas) |
| 1 cup | urad dal (split black gram) |
| 2 tablespoons | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 2 tablespoons | oil |
| 1 | onion, finely chopped |
| 1 | green chili, finely chopped |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 | lemon, juiced |
| — | salt to taste |
| 1 | banana leaf or parchment paper for steaming |
Instructions
- 1 Wash and soak the chana dal and urad dal together in water for 4-5 hours.
- 2 Drain the soaked dal and grind it to a coarse paste without adding water.
- 3 In a mixing bowl, combine the ground dal paste, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt.
- 4 Heat oil in a pan and add mustard seeds and cumin seeds. Allow them to splutter.
- 5 Add chopped onion and green chili to the pan and sauté until the onion turns translucent.
- 6 Add the sautéed onion mixture to the dal paste and mix well.
- 7 Take a portion of the mixture and shape it into a small patty or vada.
- 8 Place the vadas on a banana leaf or parchment paper and steam them for about 15-20 minutes until cooked through.
- 9 Once steamed, remove the vadas and let them cool slightly.
- 10 Before serving, drizzle lemon juice over the vadas and garnish with fresh coriander leaves.
Tips
For a smoky flavor, you can lightly roast the vadas on a hot griddle after steaming.
