Ingredients

500 grams raw jackfruit (kathal), peeled and cut into pieces
2 tablespoons mustard oil
1 teaspoon cumin seeds
1 medium onion, finely chopped
1 teaspoon ginger-garlic paste
2 green chilies, slit
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
2 medium tomatoes, pureed
1 cup water
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat mustard oil in a pressure cooker until it starts to smoke lightly.
  2. 2 Add cumin seeds and let them splutter.
  3. 3 Add chopped onions and sauté until they turn golden brown.
  4. 4 Add ginger-garlic paste and green chilies, sauté for another minute.
  5. 5 Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
  6. 6 Add the jackfruit pieces and sauté for 5-7 minutes until they are lightly browned.
  7. 7 Add tomato puree and cook until the oil separates from the masala.
  8. 8 Add water and salt to taste, stir well.
  9. 9 Close the lid of the pressure cooker and cook for 3-4 whistles or until the jackfruit is tender.
  10. 10 Once the pressure releases, open the lid and sprinkle garam masala.
  11. 11 Garnish with fresh coriander leaves and serve hot.

Tips

Ensure the jackfruit is tender before serving. Adjust spices to your taste preference.
