Ingredients
| 1 cup | small eggplants (brinjal) |
| 1 cup | tamarind extract |
| 1 tablespoon | sesame oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 1 pinch | asafoetida |
| 2 | dried red chilies |
| 1 teaspoon | sambar powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | jaggery |
| — | salt to taste |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Wash and chop the eggplants into small cubes.
- 2 Heat sesame oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add urad dal, chana dal, asafoetida, and dried red chilies. Sauté until the dals turn golden brown.
- 5 Add the chopped eggplants and sauté for a few minutes until they start to soften.
- 6 Pour in the tamarind extract and bring it to a boil.
- 7 Add sambar powder, turmeric powder, jaggery, and salt. Mix well.
- 8 Simmer on low heat until the eggplants are fully cooked and the mixture thickens slightly.
- 9 Garnish with chopped coriander leaves before serving.
Tips
For a smokier flavor, roast the eggplants over an open flame before chopping.
