Ingredients

1 cup small eggplants (brinjal)
1 cup tamarind extract
1 tablespoon sesame oil
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon chana dal
1 pinch asafoetida
2 dried red chilies
1 teaspoon sambar powder
1 teaspoon turmeric powder
1 teaspoon jaggery
salt to taste
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Wash and chop the eggplants into small cubes.
  2. 2 Heat sesame oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add urad dal, chana dal, asafoetida, and dried red chilies. Sauté until the dals turn golden brown.
  5. 5 Add the chopped eggplants and sauté for a few minutes until they start to soften.
  6. 6 Pour in the tamarind extract and bring it to a boil.
  7. 7 Add sambar powder, turmeric powder, jaggery, and salt. Mix well.
  8. 8 Simmer on low heat until the eggplants are fully cooked and the mixture thickens slightly.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

For a smokier flavor, roast the eggplants over an open flame before chopping.
