Ingredients

3 ripe bananas
1 cup jaggery
1 cup fresh grated coconut
2 tablespoons ghee
1 teaspoon cardamom powder
2 tablespoons cashew nuts
2 tablespoons raisins
salt to taste

Instructions

  1. 1 Peel the bananas and mash them thoroughly in a bowl.
  2. 2 In a pan, heat 1 tablespoon of ghee and roast the cashew nuts until golden brown. Remove and set aside.
  3. 3 In the same pan, add the remaining ghee and lightly fry the raisins until they puff up. Remove and set aside.
  4. 4 Add the mashed bananas to the pan and cook on medium heat for about 5 minutes, stirring continuously.
  5. 5 Add the jaggery and a pinch of salt to the bananas, and continue to cook until the jaggery melts and blends well with the bananas.
  6. 6 Stir in the grated coconut and cook for another 5-7 minutes until the mixture thickens.
  7. 7 Add the cardamom powder and mix well.
  8. 8 Finally, add the roasted cashew nuts and raisins, mix thoroughly, and cook for another 2 minutes.
  9. 9 Serve warm or at room temperature.

Tips

Use ripe bananas for the best sweetness and flavor. Adjust the amount of jaggery according to the sweetness of the bananas.
