Ingredients

3 | Banana , ripe, preferably Nendran variety |

1 cup | Jaggery |
|
1 cup | Coconut , fresh grated |
|
2 tablespoons | Ghee |
|
1 teaspoon | Cardamom , powder |
|
2 tablespoons | Cashew , nuts |
|
2 tablespoons | Raisin |
|
— | Salt , to taste |
Instructions
- 1 Peel the bananas and mash them thoroughly in a bowl.
- 2 In a pan, heat 1 tablespoon of ghee and roast the cashew nuts until golden brown. Remove and set aside.
- 3 In the same pan, add the remaining ghee and lightly fry the raisins until they puff up. Remove and set aside.
- 4 Add the mashed bananas to the pan and cook on medium heat for about 5 minutes, stirring continuously.
- 5 Add the jaggery and a pinch of salt to the bananas, and continue to cook until the jaggery melts and blends well with the bananas.
- 6 Stir in the grated coconut and cook for another 5-7 minutes until the mixture thickens.
- 7 Add the cardamom powder and mix well.
- 8 Finally, add the roasted cashew nuts and raisins, mix thoroughly, and cook for another 2 minutes.
- 9 Serve warm or at room temperature.
Tips
Use ripe bananas for the best sweetness and flavor. Adjust the amount of jaggery according to the sweetness of the bananas.
